Delight your friends and family with homemade smallgoods when you learn from the ‘Sausage Jedi’ himself; Ralf at Oakwood Smallgoods at The Mill Castlemaine.

A German master butcher (Fleischmeister), Ralf was sixteen when he started his apprenticeship in Germany. On the path to becoming a Fleischmeister he spent another five years learning the trade from other butchers, then underwent a six month assessment period, during which time he needed to pass 28 exams both written and practical.

These days Ralf shares his knowledge by running courses for the home enthusiast. Each session is limited to six attendees, so you can be ‘hands on’, learn easily, and enjoy the experience. All attendees need to be over 16 years of age.

August dates have just been announced:

SAUSAGE MAKING – $160.00 per person
This 3 hour course covers safety, hygiene, history and the art of making a tasty sausage!
BYO apron, as things can get a little messy!
*Morning Tea is provided.

Available dates: Saturday 17th and Saturday 24th August, 9am to 12 noon

DRY CURING AND SMOKING – $370.00 per person
This course covers an overview of the Sausage Making course and builds on this knowledge to
make you competent in smoking and dry curing a range of products. The flavours are enhanced
using traditional methods and carefully selected spices. BYO apron.
*Morning tea and lunch are provided.

If these dates don’t suit, speak with Sue about future dates or your own group event. Previously there have been family groups, birthdays and workplace team events organised, which always turn out to be great fun.
